Goose On The Loose Duck Salami with Juniper Berry 

Another treat for special occasions, premium duck breast (80%) and Pork loin (20%) with Juniper Berry. Juniper Berry is the primary botanical in Gin, especially London Dry Gin. Interestingly, Juniper Berry isn’t actually a berry, it’s a conifer, conifers prefer cool climates which is why we don’t see it used often in Australia. Ideal served with a hard/ sharp cheese such as parmesan or vintage cheddar and a dry sparkling wine, dry Apple cider or fruity European style beer such as Belgium Witbeer (eg Hoegarden).
