Zucchini Skewers



  • 3 large zucchinis  

  • 1 packet halloumi cheese  

  • 1 punnet bottom mushrooms  

  • 1 punnet grape tomatoes  

  • 1 tub pesto  

  • ½ bunch parsley 

  • Parmesan cheese  

  • 1 punnet mixed salad leaves  


  1. Preheat BBQ grill to high 

  2. Cut the zucchini and halloumi into a size that matches the cherry tomatoes and mushrooms.  

  3. Stack the skewers with each ingredient until they are full and then brush with pesto sauce and season with salt and pepper. 

  4. Place the skewers on the preheated grill and cook for 3mins on each side until golden brown. 

  5. Remove skewers from grill, brush with more pesto sauce and grate fresh parmesan on top  

  6. Serve with mixed leaves salad
