Zucchini & Halloumi Skewers

Delightfully colourful and thoroughly tasty, these skewers are perfect picnic fare - simply make them ahead and cook on a bbq at the park.

Serves 4 


  • 4 large zucchinis 
  • 400g halloumi cheese 
  • 1 punnet grape tomatoes 
  • 1 punnet button mushrooms 
  • 200g basil pesto  
  • 1 punnet mixed salad leaves  
  • 1 lemon  
  • Salt and pepper  
  • Olive oil  
  • Parmesan cheese


  1. Preheat BBQ grill to high  
  2. Cut the zucchini and halloumi into a size that matches the cherry tomatoes and mushrooms.   
  3. Stack the skewers with each ingredient until they are full and then brush with pesto sauce, season with salt and pepper.  
  4. Place the skewers on the preheated grill and cook for 3mins on each side until golden brown and cooked through.  
  5. Remove skewers from grill, brush with more pesto sauce and grate fresh Parmesan on top   
  6. Serve with mixed leaves salad and a squeeze of lemon juice.
