This white peach bellini relies on either a good box grater or microplane to get a velvety puree. These pair beautifully with green olives as an aperitif.
- 8 white peaches, grated until you have a smooth puree
- 750 ml chilled prosecco
- To make the bellini combine one part of peach puree with 3 parts of prosecco in a cold drinking glass. Serve immediately.
