Tzatziki Dip

 

Ingredients

2 cups plain Greek yoghurt

2 cups Lebanese cucumber, grated

1 cup fresh dill, minced

1 lemon, juiced

2 garlic cloves, minced

Salt and pepper to taste


Method:

Combine all ingredients in a bowl and serve or refrigerate for up to 4 days


Our top 3 ways to enjoy Tzatziki:

  1. In lamb burgers - for a fresh take on a family favourite,combine fresh lamb mince with garlic, cumin and salt and pepper. Combine sliced Spanish onion with red wine vinegar and a little brown sugar. Allow to marinate. Layer BBQ'd lamb patties on fresh Turkish bread or rolls, top with drained marinated red onion, baby spinach leaves, sliced tomato and a dollop of Tzatziki.
  2. As a sauce for corn, zucchini fritters - whip up a batch of your favourite fritters, top with rocket, fresh avocado, tomato relish and Tzatziki for the ultimate lunch!
  3. In a salad - combine cooked quinoa with fresh herbs (we like a combination of coriander, dill and mint), cooked peas, sliced spring onions and chopped roasted slithered almonds, lemon juice, extra virgin olive oil, salt & pepper. Top with flaked ocean trout and a spoonful of Tzatziki.
