Salmon Side with Pomegranate

 

 

A whole side of baked salmon topped with pomegranate seeds and honeyed macadamia nuts

Serve this fabulous side of salmon from Fish in the Family topped with pomegranate, honeyed macadamias and parsley for a complete festive feast.  

Prep time: 20 minutes

Cooking time: 25 minutes

Serves 6-8

Ingredients

  • 1 whole side of salmon (approx 1kg)  
  • 1⁄4 cup pomegranate molasses 
  • 2 tbsp olive oil  
  • ½ bunch coriander, chopped  
  • 75g pomegranate seeds 
  • 120g honey-roasted macadamias 

Method

  1. Preheat oven to 180°C.
  2. Remove salmon from fridge and place, skin-side down, on a baking tray lined with baking paper.  
  3. Mix the pomegranate molasses and oil. Pour over the fish and spread evenly to cover. Bake for 20 minutes.  
  4. Remove from oven and rest for 5 minutes. Then carefully transfer to a serving platter with the paper or gently slide the fish off the paper.
  5. In a bowl mix together chopped parsley or coriander, pomegranate arils and macadamias.  
  6. Top the fish with the garnish to serve.
