Rolled Pork Leg, Asparagus and Broccolini

  • 2 - 1.5 kg Rolled Pork Leg
  • 1tsp Ground Fennel
  • 2 Bunch Asparagus
  • 2 Bunch Broccolini
  • 150g Green Tomato Pickle
  • Salt and Peper
  • Olive oil


1. Preheat oven to 220°C.

2. Pat dry the pork leg and season with salt.

3. Sprinkle the ground fennel avoiding the top skin.

4. Place on a baking tray lined with baking paper and on top of a roasting rack with the skin side facing up.

5. Place into the oven, turn the oven down to 180°C and let it cook for 2hrs until golden brown.

6. Once cooked, remove from the oven and let it rest for 15mins.

7. Meanwhile, bring a large pot with salted water to the boil.

8. Cut the bottom ends of the asparagus and the broccolini.

9. Cook the broccolini in the boiling water for 3mins and cook the asparagus for 2mins. Drain well and place into a bowl. Add 3 tbsp of the green tomato pickle and season with salt and pepper. Toss well and serve on a platter.

10. Remove the strings from the rolled pork and slice into thin slices. Place on top of the vegetables and serve with extra green tomato pickle.
