Roasted Broccoli

Ingredients:

  • 1 cup broccoli, cut into bite size florets
  • 1 cup parsley leaves, roughly chopped
  • 1 cup mint leaves, roughly chopped
  • 1tbsp pine nuts, toasted
  • Juice of half a lemon
  • Sea salt & ground black pepper
  • Generous drizzle of
  • Finely grated parmesan cheese

Method:

  1. Preheat oven to 200°C.
  2. Roast broccoli on a lined oven tray for 15-20 minutes or until tender and golden.
  3. Toss roasted broccoli with all other ingredients except cheese.
  4. Serve topped with finely grated parmesan.
