- 1 cup broccoli, cut into bite size florets
- 1 cup parsley leaves, roughly chopped
- 1 cup mint leaves, roughly chopped
- 1tbsp pine nuts, toasted
- Juice of half a lemon
- Sea salt & ground black pepper
- Generous drizzle of
- Finely grated parmesan cheese
- Preheat oven to 200°C.
- Roast broccoli on a lined oven tray for 15-20 minutes or until tender and golden.
- Toss roasted broccoli with all other ingredients except cheese.
- Serve topped with finely grated parmesan.
