Za'atar Spiced Chicken - with Roasted Tomatoes, Tuscan Cabbage & Chickpea Salad

"It’s chicken salad, but not as you know it. No gluten or dairy here, but all the flavour thanks to some nifty Middle Eastern spices and a creamy tahini dressing. This one’s a keeper.

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat oven to 180°. Place chicken on a baking tray lined with baking paper then drizzle with olive oil. Rub salt, pepper and Zaatar mix into chicken and marinade for at least 10 mins.

    2. Place tomatoes on a baking tray lined with baking paper, drizzle olive oil and caramelised balsamic vinegar then season with salt and pepper. Toss well.

    3. In a hot large frying pan on high heat, drizzle olive oil and sear chicken skin side down for approx. 5 mins until golden. Repeat this for the other side of chicken. Place chicken back on baking tray skin side up and cook in the oven for approx. 10 mins until cooked.

    4. Meanwhile, finely chop coriander stalks (reserving leaves for later) and mince garlic. Add both to a mixing bowl with the tahini, honey, half the cumin, 2 tbsp olive oil, 2 tbsp water and the juice of half a lemon. Season
    with salt and pepper and mix well using a whisk and set aside. Devein the Tuscan cabbage by removing leaves from hard stem. Roughly chop leaves into 4cm pieces. Cook tomatoes in the oven for approx. 10 mins until soft.

    5. Open and drain the chickpea tins, reserving half of the water from one tin. In the same pan used to sear the chicken, drizzle olive oil and bring pan back to high heat. In two batches, sauté the Tuscan cabbage for approx. 2 mins. When the second batch is cooked, add the first batch in together with the remaining cumin, juice of half a lemon, chickpeas and reserved chickpea water. Cook for approx. 5 mins then remove from heat.

    6. Once cooked, remove chicken from the oven and transfer to a chopping board to rest for a few mins before slicing. Add juices from baking tray to the pan with chickpeas. Slice chicken into thin strips and serve with chickpeas, Tuscan cabbage and tomatoes. Finish with tahini dressing and reserved coriander leaves. Consume within 48 hrs.
