Steak, mash, broccoli. Sounds simple right? But the devil's in the detail (garlic, sage, lemon zest, almonds we're looking at you) that take this dish from simple ... to sensational!

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Bring a medium size pot of water to the boil and cut broccoli into florets. Set aside.

    2. Wash potatoes under running water until clean and cut into 2cm cubes. Peel parsnip and cut into 2cm cubes. Put the potato and parsnip in a pot, fill with water and add a good pinch of salt. Bring to the boil, reduce heat to low and simmer for approx. 15 mins until soft.

    3. Finely slice garlic, roughly chop sage leaves and zest one lemon, set aside. Season pork steaks with salt and pepper on both sides. Heat a frying pan to high heat, drizzle with olive oil and cook pork steaks for approx. 3 mins on each side.

    4. Reduce heat to low, add garlic, sage leaves, brown sugar, lemon zest and 25g of the butter. Cook for 2 mins, continually basting the pork with pan juices using a spoon. Remove pan from heat and rest.

    5. Once soft, drain the potato and parsnip and add back to the same pot. Add milk, paprika and remaining butter (75g). Mash well using potato masher and season with salt and pepper until well mixed, set aside. Blanch broccoli in boiling water for approx. 5 mins then drain. Drizzle olive oil, juice of half a lemon and sliced almonds, toss well.

    6. Serve pork with potato parsnip mash and broccoli. Dress well with the juices from pork frying pan. Consume within 48 hrs.
