Lamb Souvlaki - with Greek Style Salad & Eggplant Puree

Make no stick about it, spiced lamb on a skewer is delicious. Add smoky eggplant, tomatoes, olives and a good squeeze of lemon and you’ll never look at a late-night souvlaki the same way again.

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat the oven to 200°C. Soak the skewers in water. Cut the zucchini in half lengthways then cut into 2cm half-moons. Place into a bowl together with the diced lamb. Sprinkle over the Greek spice and season with salt and pepper. Add the juice of 1 lemon and a good drizzle of olive oil, toss well. Make the skewers (1 piece lamb, 1 piece zucchini) and set aside.

    2. Peel onion and cut into thin wedges. Place onion and the tomatoes on a baking tray lined with baking paper. Drizzle the caramelised balsamic and some olive oil, toss well. Cook in the oven for approx. 15 mins until soft and caramelised, remove from oven and set aside.

    3. Cut eggplant in half lengthways. Place a frying pan on high heat. When hot, drizzle olive oil and sear eggplants for approx. 2 mins on each side. Repeat until eggplants are very soft and charred. Remove from pan and let cool until just warm.

    4. Add eggplants to a blender with the yoghurt, tahini, cumin and the juice of half a lemon. Season with salt and pepper, blitz into a puree, set aside.

    5. Bring a griller, BBQ or large frying pan to high heat. Pick parsley leaves and roughly chop. Add to a bowl together with the olives and the cooked onion and tomatoes. Drizzle olive oil, season with salt and pepper and toss to combine. Cook the skewers for approx. 8 mins until golden and slightly charred on all sides.

    6. Plate up the eggplant puree, roasted tomato salad and the lamb souvlaki. Garnish with remaining lemon. Consume within 48 hrs.
