Basin Vegetable Ratatouille


A saucy little dish that will warm up your insides.

Basin Vegetable Ratatouille


  • 1 red capsicum sliced
  • 1 black eggplant cut into cubes
  • 1 Spanish onion cut into wedges
  • 2 celery sticks
  • 2 tomatoes cut into cheeks
  • 2 cloves garlic
  • salt
  • pepper
  • caramelised balsamic vinegar
  • lemon juice
  • parsley


    1. Sauté capsicum until it starts to soften in olive oil
    2. Add garlic and onions and sweat till translucent
    3. Add other ingredients (eggplant, celery, tomatoes) and cook till everything becomes tender and the juices come out
    4. Season with salt, pepper, lemon juice and balsamic vinegar to taste
    5. Finish with some finely sliced parsley
