Basin Vegetable Ratatouille
A saucy little dish that will warm up your insides.
Basin Vegetable Ratatouille
Ingredients
- 1 red capsicum sliced
- 1 black eggplant cut into cubes
- 1 Spanish onion cut into wedges
- 2 celery sticks
- 2 tomatoes cut into cheeks
- 2 cloves garlic
- salt
- pepper
- caramelised balsamic vinegar
- lemon juice
- parsley
Method
- Sauté capsicum until it starts to soften in olive oil
- Add garlic and onions and sweat till translucent
- Add other ingredients (eggplant, celery, tomatoes) and cook till everything becomes tender and the juices come out
- Season with salt, pepper, lemon juice and balsamic vinegar to taste
- Finish with some finely sliced parsley
