Our imperfect pudgy pear may be a little out of shape but it's perfect in this salad. The parmesan does all the work for you, meaning, no added salt and allows the pear to really be the star of the dish.
- 1 pear - skin off sliced
- 1 fennel - finely shaved
- 20g parmesan - shaved
- Lemon juice
- Extra virgin olive oil
- Black pepper
- Slice pear (skin off) & shave fennel, combine together with 20g shaved parmesan
- Create salad dressing balancing 1 part lemon juice to 2 part extra virgin olive oil add a pinch of sugar and stir through black pepper to taste
- Pour over dressing and toss salad to finish.
