Peanut Chilli Noodles

Serves: 4 

Ingredients: 

 400–500g dried noodles 

Sauce

  • 1/3 cup peanut butter
  • 3 cloves garlic (minced)
  • 1/4 cup soy sauce
  • 1/4 cup chilli oil
  • 1 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1/2 cup reserved noodle cooking water 

Garnish 

  • Spring onions
  • Crushed peanuts
  • Coriander
  • Extra chilli oil 

Method:

1) Cook noodles according to packet instructions. Reserve 1/2 cup of the noodle cooking water before draining. 

2) In a bowl, mix peanut butter, garlic, soy sauce, chilli oil, rice vinegar and honey. Stir through the reserved noodle water until smooth and glossy. 

3) Toss the hot noodles through the sauce until evenly coated. Top with spring onions, peanuts, coriander and extra chilli oil. Serve immediately.
