One Tray Greek Chicken Drumsticks

Ingredients:

4 chicken Maryland or 1-1.2kg drumsticks

3 garlic cloves, chopped or grated

1 tbsp Greek spice mix

2 tbsp olive oil
-
2 zucchinis, cut in half lengthwise

1 eggplant, cut in 4 lengthwise

1 punnet mix tomatoes
-
1 can chickpeas, drained
-
¼ bunch coriander, chopped
-
1 tsp ground cumin
-
1 tsp smoked paprika
-
Salt and pepper

250g Tzatziki
Method:

Preheat the oven to 180°C.

Make 2 long insertions on the thickest part of the thigh and the drumstick.

Place the chicken on a deep baking tray or dish. Season with ½ tsp of salt, ¼ tsp of pepper, Greek spice and 1 tbsp of olive oil. Rub well and place on top of a cooking rack.

In the same tray, place the zucchini, eggplant, chickpeas and tomatoes.

Sprinkle with the paprika, cumin, ½ tsp of salt and ¼ tsp of pepper and drizzle with 1 tbsp of olive oil. Mix through.

Place the chicken on the rack on top of the baking dish so all the chicken juices drip onto the vegetables.

Cook for 35-40 minutes until the chicken is fully cooked and golden brown.

Serve hot with tzatziki on the side, drizzle with the tray juices and garnish with coriander.
