One Tray Greek Chicken Drumsticks

Prep time: 10 minutes 

Cooking time: 40 minutes 

Serves: 4  

Ingredients: 

  • 4 chicken Maryland or 1-1.2kg drumsticks 

  • 3 garlic cloves, chopped or grated 

  • 1 tbsp Greek spice mix 

  • 2 tbsp olive oil  

  • 2 zucchinis, cut in half lengthwise 

  • 1 eggplant, cut in 4 lengthwise 

  • 1 punnet mix tomatoes 

  • 1 can chickpeas, drained 

  • ¼ bunch coriander, chopped 

  • 1 tsp ground cumin 

  • 1 tsp smoked paprika 

  • Salt and pepper 

  • 250g Tzatziki  

Method:

  1. Preheat the oven to 180°C.  

  1. Make 2 long insertions on the thickest part of the thigh and the drumstick. 

  1. Place the chicken on a deep baking tray or dish. Season with ½ tsp of salt, ¼ tsp of pepper, Greek spice and 1 tbsp of olive oil. Rub well and place on top of a cooking rack. 

  1. In the same tray, place the zucchini, eggplant, chickpeas and tomatoes. 

  1. Sprinkle with the paprika, cumin, ½ tsp of salt and ¼ tsp of pepper and drizzle with 1 tbsp of olive oil. Mix through. 

  1. Place the chicken on the rack on top of the baking dish so all the chicken juices drip onto the vegetables. 

  1. Cook for 35-40 minutes until the chicken is fully cooked and golden brown.  

  1. Serve hot with tzatziki on the side, drizzle with the tray juices and garnish with coriander.
