Miso and Maple Pork Bites

Ingredients

Main

  • 800 g – 1.3 kg pork belly, cut across into 2 cm thick steaks

  • 240 ml miso and maple marinade (Beerenberg)

  • 1 bunch Asian greens

  • 2 cups rice

Optional Add-ons

  • Fried shallots

  • Sesame seeds

  • Chilli oil, fresh chilli, or chilli flakes

Method

  1. Remove the pork belly from the fridge at least 1 hour before cooking.

  2. Place the pork belly steaks in a mixing bowl. Add the marinade and set aside for at least 30 minutes (or overnight if possible).

  3. Cook the pork belly steaks either in an air fryer at 200°C for 20–25 minutes or in a very hot oven at 220–240°C for 20–25 minutes, until golden brown and caramelised.

  4. Once cooked, cut the steaks into 1–2 cm bites.

  5. Cook the rice according to packet instructions.

  6. Cook the Asian greens for 3 minutes in boiling water or in a steamer.

  7. Serve the pork belly bites with rice and Asian greens. Top with fried shallots, sesame seeds, and chilli oil if desired.
