Miso and Maple Pork Bites

800 g – 1.3 kg pork belly, cut across into 2 cm thick steaks

240 ml miso and maple marinade (Beerenberg)

1 bunch Asian greens
-
2 cups rice
Optional Add-ons

Fried shallots

Sesame seeds

Chilli oil, fresh chilli, or chilli flakes
Method

Remove the pork belly from the fridge at least 1 hour before cooking.

Place the pork belly steaks in a mixing bowl. Add the marinade and set aside for at least 30 minutes (or overnight if possible).

Cook the pork belly steaks either in an air fryer at 200°C for 20–25 minutes or in a very hot oven at 220–240°C for 20–25 minutes, until golden brown and caramelised.

Once cooked, cut the steaks into 1–2 cm bites.

Cook the rice according to packet instructions.

Cook the Asian greens for 3 minutes in boiling water or in a steamer.

Serve the pork belly bites with rice and Asian greens. Top with fried shallots, sesame seeds, and chilli oil if desired.
