Grilled Prawns with Chilli Garlic Herb Butter

Serves: 4

Ingredients:

  • 500g peeled prawns
  • 200g butter
  • 3–4 garlic cloves
  • 1 tsp crushed chili
  • 2 tbsp chopped parsley
  • 2 tbsp chopped coriander
  • 1 tsp paprika
  • 1 lemon

Method:

  1. Preheat a BBQ or griddle to high heat.
  2. Remove the butter from the fridge at least 1 hour before prepping to let it soften to room temperature in a bowl.
  3. Meanwhile, crush the garlic cloves, add the crushed chili, chop the parsley and coriander, zest the rind of a lemon, and add to the butter.
  4. Mix well until fully combined and set aside.
  5. Place the prawns in a mixing bowl, drizzle with olive oil, and season with salt and pepper.
  6. Cook the prawns for approximately 3 minutes on each side over the hot grill.
  7. Place the prawns on a frying pan over the grill, add some of the butter, and toss through with the juice of a lemon. Season with salt and pepper and serve hot.
  8. Garnish with lemon wedges and fresh herbs. Enjoy!
