Grilled Prawns with Chilli Garlic Herb Butter

Ingredients:
- 500g peeled prawns
- 200g butter
- 3–4 garlic cloves
- 1 tsp crushed chili
- 2 tbsp chopped parsley
- 2 tbsp chopped coriander
- 1 tsp paprika
- 1 lemon
Method:
- Preheat a BBQ or griddle to high heat.
- Remove the butter from the fridge at least 1 hour before prepping to let it soften to room temperature in a bowl.
- Meanwhile, crush the garlic cloves, add the crushed chili, chop the parsley and coriander, zest the rind of a lemon, and add to the butter.
- Mix well until fully combined and set aside.
- Place the prawns in a mixing bowl, drizzle with olive oil, and season with salt and pepper.
- Cook the prawns for approximately 3 minutes on each side over the hot grill.
- Place the prawns on a frying pan over the grill, add some of the butter, and toss through with the juice of a lemon. Season with salt and pepper and serve hot.
- Garnish with lemon wedges and fresh herbs. Enjoy!
