Grilled Green Bean Salad with Butter Beans & Honey Mustard Dressing

  • 1 Tbsp Dijon Mustard  
  • ½ Tbsp Honey  
  • 1 Lemon  
  • ¾ Cup Olive Oil  
  • 500g Green Beans  
  • 2 Bunch Broccolini  
  • 1 Can 400g Butter Beans  
  • ¼ Spanish Onion  
  • ¼ Cup Silvered Almonds  
  • Salt and Pepper 


1. Preheat a BBQ or griddle on high heat. Preheat the oven to 180°C. 

2. Place the mustard, honey and the juice of 1 lemon in a mixing bowl. Season with salt and pepper.  

3. Whisk until combined. Slowly start pouring the olive oil until combined. Set aside in the fridge. 

4. Place the silvered almonds on a baking tray and place into the oven, roast them for 5-7mis until golden brown. Remove from the oven and let cool.  

5. Cut the tops of the green beans and place them in a bowl. Drizzle with olive oil and season with salt and pepper. Toss and place on the BBQ.  

6. Cook the beans for approx. 5-7mins until lightly charred tossing them from time to time. Remove from the BBQ and place on a salad bowl. 

7. Cut off the bottom ends of the broccolini and discard. Place the broccolinis on the BBQ and cook for approx. 3-5mins on each side until lightly charred. Remove from the BQ and add to the salad bowl. 

8. Drain the Butter beans and rinse well. Add to the salad bowl. 

9. Finely slice the ¼ onion and add to the bowl. 

10. Add the Silvered roasted almonds. 

11. Drizzle with some of the dressing and toss well.  

12. Check seasoning and serve at room temperature
