Cauliflower Puree




  1. Put cauliflower into a large pot.
  2. Tie a celery stick, a few sprigs of thyme and a bay leaf together with cooking string and add to the pot.
  3. Add salt and peppercorns.
  4. Cover with milk and simmer until soft.
  5. Drain well and remove thyme bundle.
  6. Put cauliflower into a blender, drizzle some olive oil and blend until smooth.
  7. Season with salt and pepper to taste and garnish with parsley leaves (optional).
