Beef Rump Cap Stroganoff

Serves: 4-6

Ingredients 

  • 1 Whole Beef Rump Cap  

  • 700-800g (Dutch Cream) Potatoes  

  • 1tsp Paprika 

  • 400g Cap Mushrooms  

  • 1 Brown Onion  

  • 4 Garlic Cloves  

  • 1 ½ Tbsp Chopped Thyme 

  • 1 tsp English Mustard  

  • 2 Tbsp Dijon Mustard 

  • ¼ Cup Worcestershire Sauce  

  • 600ml Thickened Cream  

  • 1 Bunch Chives  

  • Salt and Pepper  

  • Olive Oil

Method 

  1. Remove beef from the fridge at least 1hr before cooking. Pat dry the beef rump cap and score the fat. Season with salt and pepper and set aside. 

    Peel and cut the potatoes into wedges. Place the potatoes on top of a sheet of foil and season with salt, pepper and paprika. Drizzle with olive oil and wrap it with the foil. 

     

  2. Place the potatoes and the beef in the air fryer if possible, if not, cook the potatoes in a preheated oven at 200°C for 35-40mins. Set the air fryer to 185°C and cook the beef for 35-45mins depending on the size and for medium rare.  

     

  3. Meanwhile, finely slice the onion and chop the garlic. Chop the thyme, finely slice the mushrooms, and finely slice the chives. Set aside.  

     

  4. Bring a large pan to medium high heat. Drizzle with olive oil. Add the onions and sauté for 3mins, then add the garlic and the thyme and sauté for further 2-3 mins until golden brown. 

     

  5. Add the sliced mushrooms and cook for approx. 5-7mins untl mushrooms are soft. 

     

  6. Add the mustard and the Worcestershire sauce, stir through and add the cream. Bring to the boil and turn down to low. Season with salt and pepper. Cook for 10-15 mins stirring occasionally and keep warm. 

     

  7. Once beef is ready, remove it from the air fryer and let it rest for at least 15mins before slinging it. 

     

  8. Remove the foil from the potatoes and place back into the air fryer, toss them with the meat juices and oil and cook for 15mins on 200°C while the beef is resting.  

     

  9. Finely slice the beef. Serve with roasted potatoes and Stroganoff sauce. Garnish with chives and enjoy.
