BBQ Chilli Prawns with Grilled Lime
Ingredients
- 1kg Green King Prawns
- 2 Red Chillies, deseeded and roughly chopped
- 1 Bunch Oregano, destemmed
- 1 Garlic Bulb, cloves peeled
- Olive Oil
- 3 Limes halved
- Salt & Pepper
- Wooden Skewers
Method
- Peel and devein the prawns using a sharp serrated knife, keep the heads and tails intact.
- Reserve a little oregano for serving. Place the chilli, garlic and remaining oregano in the bowl of a food processor or blender. Gently pulse until combined (stop before it becomes a paste or it will burn on the grill). Stir the olive oil through.
- Toss the prawns in the marinade and refrigerate for at least 2 hours.
- Thread the prawns onto pre-soaked wooden skewers.
- Pre-heat BBQ or cast iron grill until very hot. Season the prawns with sea salt & pepper. Cook on one side for 3-5 minutes. Turn and cook for a further minute, or until just cooked through.
- Turn grill off and place the limes, cut side down, on the grill for a few minutes to char and heighten the flavour.
- Place prawns on a platter with charred limes and aioli or seafood sauce. Sprinkle over reserved oregano leaves.
Notes: Allow the prawns to cool a little before serving so fingers don't get burnt!
