Malaysian Prawn Stir Fry - With Hokkien Noodles

1. Soak the noodles in hot water for about 5 mins to separate them and set aside.
Julienne the capsicum into thin strips, cut the broccoli into florets, the zucchini into half-moons and finely slice the shallots.



 

2. In a wok or pan on high heat, drizzle in oil and add the capsicum, cooking for 3 minutes. Remove and set aside.
Add some more oil, add the prawns and shallots, cook for 3 minutes. Remove, then cook the zucchini and broccoli for 2 mins.


 

 

3. Add the prawns and capsicum back in, add ½ a jar of the Sambal Shrimp paste, and cook for a further 2 minutes.
Add ¼ cup of water and the noodles, cooking for 3-4 mins and season well with salt and pepper. 

 


 

4. Serve hot, with a squeeze of ½ a lemon.
Our chef recommends adding some fresh chillies, or seasoning with soy sauce, sesame oil and sweet chilli sauce if you have it available.
