Harris Farm Raw Sliced Potato
These Pre-Cut hearty and creamy little spuds are a time saving dream. Hailing from the Mallee Region in Victoria, these tough little spuds survive volatile weather conditions. Farmer Peter Corcoran, a third generation potato farmer and owner of the Platinum Potato farm where these little beauties come from often temperatures of 47° at the beggining of planting season.
POTATO & LEEK GRATIN:
1kg HFM sliced potatoes
3 Garlic cloves
1 brown onion
¼ bunch thyme
200g gruyere cheese

Preheat the oven to 200*C
Finelly slice the onion, leek and garlic. In a hot frying pan on high heat, drizzle olive oil, add the leek, onion, picked thyme and garlic and cook for approx. 5 min stirring constantly until golden brown. Set aside.
Drain and pad dry the potato slices, place the potatoes on a mixing bowl and add the onion, garlic and leek sofrito, grate the gruyere cheese and add ¾ to the bowl, add the cream and season with salt and peeper.
Place the mixture into a baking dish and evenly press down until all level, sprinkle the leftover cheese, place in the preheated oven and cook for 35min or until potato is soft and golden brown.
Store below 5 degrees.
Once opened, refrigerate in water.
