Beef and Pork Nachos

Bring a large frying pan to high heat, drizzle olive oil and add the mince, stirring and breaking up for approx. 5 min until cooked. Drain the red beans and add them to the pan, add the Mexican sauce and bring to the boil, then turn down to simmer for another 5 mins.



To make your guac, combine avocado, ½ of the sour cream and salt and pepper in a mixing bowl. If you’d like to include coriander, chop up some, including the stalks and add this into the bowl, reserving a few leaves for garnishing. Set aside.



Quarter, slice or dice your tomatoes and cucumber, mixing in salt and pepper to taste. Sprinkle over any leftover chopped coriander as you please. Drizzle with olive oil and set aside. 



Bring your masterpiece together! We’re old school; corn chips on the bottom, top loaded with mince. Assemble your nachos, like so, on an oven proof tray and sprinkle cheese over the top. Place the nachos in the oven on grill and allow to melt for 10-15 mins. Spoon over you avo mash, sour cream and tomato salsa once out of the oven!
