Zucchini, Corn and Fetta Fritters

#HarrisFarmFoodie @redgumboots gets it right with these extremely simple Zucchini, Corn and Fetta Fritters. Yum!


• 2 eggs
• ½ cup flour
• ¼ cup milk
• 1 large zucchini, grated
• 150g corn kernels
• 80g fetta cheese, crumbled
• 1 tsp dried onion flakes
• 1 tsp finely chopped baby capers
Salt and pepper to taste


1. Combine the eggs, flour and milk and whisk until the batter is smooth and an even consistency. Add the remaining ingredients, and mix together well.
2. Use a heaped dessert spoon to portion the mixture, placing each spoonful in a fry pan and using the back of the spoon to flatten it a little; shallow fry the fritters in olive oil in several batches until golden brown.
3. Delicious served warm with a wedge of lemon, but also fabulous cold in school lunchboxes.
