Whole Roasted Cauliflower with Tzatziki Yoghurt
Ingredients
- 1 Cauliflower
- 1 Tbsp Dijon Mustard
- 1 Tbsp Honey
- 1/2 Tbsp Moroccan Spice Mix
- 1/3 Cup Olive Oil
- Salt and Pepper
- 200g Tzatziki Yoghurt
- 1/4 Bunch Coriander
Method
- Preheat the oven to 180°C.
In a small mixing bowl, combine the mustard, honey, Moroccan spice mix, salt, and pepper along with the olive oil. Set aside.
- Remove the outer leaves of the cauliflower and cut the bottom of the stem straight so the cauliflower can sit upright on the tray.
Place the cauliflower on a lined baking tray and brush it all over with half of the honey mustard marinade. - Put in the oven and cook for 30 minutes. Then, remove it from the oven and brush it with some more of the marinade. Place it back in the oven and cook for another 30 minutes until it is fully cooked and golden brown.
- Remove it from the oven and set aside for 10 minutes.
Meanwhile, wash and finely chop the coriander, and set aside. - Place the cauliflower on a platter and cut it into 4 wedges. Drizzle it with the tzatziki and cover it with the tray juice.
Sprinkle some fresh chopped coriander on top and enjoy!
