Warm Chocolate Pudding with Almonds and Ice Cream

Prep time: 10 minutes  

Cooking time: 30 minutes  

Serves: 4-6 

Ingredients:

  • 140g plain flour, sifted  

  • 160g white sugar 

  • ½ cup cocoa powder, divided into 2 quarters, sifted 

  • 2 tsp baking powder 

  • ½ tsp salt 

  • 1 cup milk 

  • 1 ½ tsp vanilla 

  • 35g butter, melted 

  • 150g brown sugar 

  • 80g dark chocolate, chopped or chips 

  • ¼ cup almond flakes  

  • 320ml long black coffee, hot 

  • Ice cream of your choice to serve  

Method:

  1. Preheat the oven to 170°C. 

  1. In a mixing bowl, add the flour, white sugar, ¼ cup of cocoa powder, baking powder and salt. Mix with a whisk. 

  1. Pour in the milk, vanilla and melted butter and whisk to combine. 

  1. Pour in the mixture into a baking dish of approximately 20-22 cm diameter and set aside. 

  1. In a separate bowl, whisk together the chocolate, brown sugar, almond flakes and the remaining ¼ cup of cocoa powder. 

  1. Sprinkle the dry mixture all over the top of the cake and do not mix it. 

  1. Gently pour in the hot coffee and place the dish into the oven.  

  1. Cook for 30 mins until the top is firm but still wobbles in the middle and around the sides. 

  1. Remove from the oven and let it cool for 5 minutes on top of rack. 

  1. Serve chocolate pudding warm with ice cream. Enjoy.
