Truffle and Cheese Toastie

Ingredients
- 8 Slices of Sourdough
- 50g Butter
- 120g Fontina Cheese
- 120g Cheddar Cheese
- 35g Fresh Black Truffle
- Salt and Pepper
Method

Preheat the oven to 180°C.
- Butter both sides of each bread slice.
- Grate the fontina cheese and place it on top of 4 of the bread slices. Then add the cheddar cheese.
- Using a truffle slicer or a microplane, finely slice or grate the truffle on top of the cheese, season with salt and pepper, and place the other sourdough slice on top.
- Bring a large frying pan to medium heat. Place 2 of the sandwiches in the pan and cook for 3 minutes on each side until golden brown. Place them on a baking tray and repeat with the remaining 2 sandwiches.
- Place them in the oven for 5 minutes until the cheese is fully melted.
- Cut the sandwiches in half, season with a pinch of salt, and garnish with as many slices of truffle as desired.
