Got some overripe fruit on your hands, or just looking for a sweet treat without added sugar? Then this is the recipe for you.
- 4 peaches, halved
- 4 nectarines, halved
- 5 apricots, halved
- 1 cinnamon stick
- 1 vanilla bean, halved and seeds scraped onto fruit
- 1 tsp honey
- Preheat oven to 180°C.
- Place ingredients into a baking dish and bake for 25-30 minutes, or until the fruit is soft. Serve with a dollop of cream or ice- cream for dessert, or have for breakfast with muesli, natural yoghurt and honey.
