The flat peach — also known as a Saturn or doughnut peach — is a summer curiosity that delivers on its unusual shape. Squat, disc-shaped, and with a central stone that almost pops out, it has a fragrant, intensely sweet flesh with very little acidity. They are messy in the best possible way and are worth trying if you have never had one.
Flat peaches are at their best from November through January when Australian stone fruit orchards are at peak ripeness. Their season is relatively short, so buy them when you see them looking their best.
Look for flat peaches with a good blush and flesh that gives slightly to gentle pressure. Avoid very firm fruit with no give, or anything very soft. Leave firm ones on the bench for a day to finish ripening.
Eat them fresh and enjoy the ease with which the stone releases. The sweet fragrance and low acidity makes them particularly good eaten raw, over yoghurt, or sliced into a summer fruit salad.
