Summer Trifle

 

INGREDIENTS:

  • 2 Mangoes

  • 10 x Passion fruit

  • 2 punnets Strawberries

  • 10 green kiwis

  • 3 packs of lemon slice

  • 1kg yoghurt vanilla

  • 1 Lt cream

  • 1 vanilla bean pod

  • 2 tbsp icing sugar

 

METHOD:

  1. Place the cream, icing sugar and the scraped vanilla pod into a mixing bowl. Using an electric mixer, beat the cream until hard peaks form, approx. 8min on medium speed. Keep chilled. 

  2. Peel and slice the mangoes, slice the kiwis and slice the strawberries.

  3. Build your trifle by layering: start with the lemon slice, then yoghurt, then fruits. Repeat, only this time go lemon slice, vanilla cream, fruits, yoghurt, lemon slice, cream. Top with excess fruit and garnish with edible flowers.
