Slow Cooked Beef In Black Bean Sauce
Prep time: 10 minutes
Cooking time: slow cook for minimum 6 hours or pressure cooker for 30-45 minutes

Ingredients:

1 tbsp cooking oil

1kg beef chuck steak
-
1 bunch shallots, finely sliced

1 knob ginger, finely sliced

210g black bean sauce Ayam
-
1 tbsp brown sugar
-
1 tbsp rice vinegar
-
1 tsp sesame oil
-
2 cups rice
-
1 bunch Choy Sum or any other Asian green
-
1 red chilli (optional) finely sliced

1 tbsp sesame seeds
Method

Bring a frying pan to high heat and drizzle with cooking oil. Place the beef and sear for 3 minutes on each side until golden making sure to not over crowd the pan. (do it in 2 batches if necessary). Place the beef into the slow cooker.

Reserve 1 cup of the shallots for garnishing.

In the same pan, sauté the remaining shallots and the ginger for 3 minutes until soften. Add it to the beef.

Add the black bean sauce. Rinse the bottle halfway up with water and add it to the beef.

Add the sugar, vinegar and sesame oil. Mix through and close with the lid. Set the time for 6-8 or 10 hours on slow cook or 30-45 minutes for pressure cooker.

Cook the rice as per packet instructions 30 minutes before serving.

Cook the Choy Sum (or any other Asian greens) for 2-3 minutes in boiling water before serving.

Serve beef hot with black bean sauce, rice, Asian greens and garnish with fresh chilli, shallots and sesame seeds.
