Crisp and refreshing this salad is perfect for a hot summers day
Rockmelon salad with basil, fresh mozzarella & onion
INGREDIENTS
1 medium rockmelon, cut into cubes
10-20 leaves of basil, finely sliced
10 green olives, sliced
1/4 red onion, thinly sliced
1 cup fresh mozzarella balls, sliced into quarters
Olive oil
Red wine vinegar
1 lime, juiced
Salt and pepper to taste
METHOD
In a large bowl, toss the rockmelon, basil, olives, red onion and mozzarella balls together.
Lightly dress the salad with olive oil, a drizzle of red wine vinegar and lime juice.
Toss into the salad. Season generously with salt and pepper.
