Rockmelon salad with basil, fresh mozzarella & onion

INGREDIENTS

  • 1 medium rockmelon, cut into cubes
  • 10-20 leaves of basil, finely sliced
  • 10 green olives, sliced
  • 1/4 red onion, thinly sliced
  • 1 cup fresh mozzarella balls, sliced into quarters
  • Olive oil
  • Red wine vinegar
  • 1 lime, juiced
  • Salt and pepper to taste
  • METHOD

    In a large bowl, toss the rockmelon, basil, olives, red onion and mozzarella balls together.
    Lightly dress the salad with olive oil, a drizzle of red wine vinegar and lime juice.
    Toss into the salad. Season generously with salt and pepper.
