Roasted Chicken Baguette

Serves: 4
Ingredients:

½ Roasted chicken, lightly teared

1 baguette

4 tbsp capsicum and eggplant stir through sauce (Sacla)

4 tbsp rocket pesto

50g rocket and spinach salad

125g buffalo mozzarella ball, thinly sliced

150g grilled capsicum strips (HFM)

½ tsp sea salt

¼ tsp pepper
Method:

Preheat a BBQ grill on high heat.

Place the chicken into a bowl and add the cooking juices form the bag.

Slice the baguette in half lengthways and char grilled for 3-5 minutes until golden brown and charred. Remove from grill and set aside on a chopping board.

Spread the capsicum and eggplant sauce on one side of the baguette and the rocket pesto on the other side.

Add salad all along the bottom side of the baguette, follow by capsicum, buffalo mozzarella and chicken. Sprinkle with salt and pepper and place the top side of the baguette on top.

Cut into 4 pieces and serve.
