Smoked Trout Capunti - with Asparagus, Dill & Pink Peppercorn Dressing

Introducing; a fast smoked fish pasta, that’s just a little bit fancy. Serve it warm for the family, or room temperature for lunch the next day (it’s great either way).

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Bring two large pots of salted water to the boil. Trim the hard ends off the asparagus and discard. Blanch asparagus in boiling water for approx. 2 mins. Drain and refresh with cold water to stop further cooking.

    2. Dry asparagus and cut into 2cm pieces then add to a mixing bowl with the zest of one lemon. Add pasta to boiling water and cook for approx. 22 mins or until al dente, stirring occasionally.

    3. Finely chop onion and garlic. In a hot frying on a medium-high heat, drizzle olive oil and cook onion and garlic for approx. 5 mins until golden. Remove from heat.

    4. Gently pick flesh from the trout into flakes, add to the mixing bowl with asparagus. Pick all the leaves from the dill and roughly chop. Add half of the chopped dill to the mixing bowl, set other half aside. Chop pink peppercorns using a knife. Reserve a pinch for garnish then add the rest to a separate mixing bowl together with crème fraiche, juice of 1 lemon and remaining chopped dill. Season well with salt and mix together.

    5. Once cooked, drain pasta, drizzle with some olive oil and toss through. Add pasta to the asparagus and trout, together with the cooked onion and gently fold through.

    6. Serve capunti pasta warm and finish with a good drizzle of the lemon dill crème fraiche and a sprinkle of reserved peppercorns. Consume within 48 hrs.
