Porcini Mushroom Risotto - with Italian Sausage & Spinach

In the mood for comfort food? Step this way. Mini sausage meatballs, oozy risotto, plus spinach and plenty of cheese. This is like a hug from your Nonna, in a bowl.

 

COOKING INSTRUCTIONS

    1. Give all your vegies all little wash. Bring a full kettle of water to the boil. Peel the eschallots and garlic, finely chop. Cut bullhorn chilli in half lengthways, remove all the seeds and finely dice. Finely grate the pecorino cheese. Cut the larger pieces of porcini mushrooms in half. Place mushrooms into a bowl and cover with boiling water. Soak for approx. 5 mins, drain the water and set mushrooms aside.

    2. Slice the sausages into 1cm pieces. Bring a medium size frying pan to high heat. Drizzle olive oil and add the spinach leaves. Sautée for approx. 30 secs until vibrant green, then remove from pan. Add sausage to the pan and cook for approx. 3 mins until golden.

    3. In the same frying pan on high heat, drizzle olive oil and sauté red bullhorn chilli for approx. 2 mins. Add the onion and garlic and cook for approx. 2 mins. Add mushrooms to the pan and cook whilst stirring for approx. 2 mins.

    4. Add the rice to saucepan. Pour in 1½ cups of boiling water. Whilst stirring, bring to the boil, ensuring rice isn’t sticking to the bottom then reduce heat to medium. Once the rice has absorbed most of the liquid, add ¾ cup of boiling water. Stir occasionally until the risotto starts becoming creamy and the rice is cooked to al dente. Very finely chop the spinach leaves, as shown.

    5. Add the chopped spinach, butter and  all but a small handful of the pecorino, stir well for approx. 2 mins. Add a splash of water if necessary, remove from heat.

    6. Serve risotto with fresh cracked pepper, the goats curd and remaining pecorino. Consume within 48 hrs.
