Do you fancy your dinner with a side of zen? This is chicken, noodles and greens, but probably not as you know it. Eat it out of bowls or arrange it artfully on a platter. Whatever you do, try and set some aside for lunch tomorrow (your future self will thank you).

 

COOKING INSTRUCTIONS

  1. Buy Miso Poached Chicken with Udon Meal Kit from Harris Farm Online
    1. Give all your vegies a little wash. Finely grate the garlic using a microplane (otherwise chop as finely as possible). Finely chop shallots and coriander stalks, reserve leaves. Add grated garlic and coriander stalks to a mixing bowl with the miso paste, mirin, maple syrup and a 1/4 cup of water. Whisk well, set aside.

    2. Cut the chicken breast diagonally into 1.5 cm strips. Add to the marinade and toss well. With a small knife, trim the ends of the snow peas and devein on both sides. Using your hands, separate the mushrooms into individual pieces.

    3. Bring a large pot and a small pot of salted water to the boil. Bring a large frying pan to high heat then drizzle half (1 tablespoon) of the grapeseed oil and cook shallots for approx. 2 mins. Add mushrooms, cook for approx. 3 mins. Remove from pan and set aside.

    4. In the same frying pan, add the remaining grapeseed oil (1 tablespoon). Bring to high heat then sear chicken strips (reserving the marinade) for approx. 5 mins before turning. Turn the chicken and add remaining marinade and 1/2 cup of water. Bring to the boil then add the shallots, mushroom and fresh snow peas. Toss well, check seasoning and remove pan from heat.
  5. 5. Add udon noodles to boiling water, stirring occasionally to ensure noodles don’t stick together. Cook for approx. 10 mins until al dente. Meanwhile, add buk choy baby to the other pot of boiling water and blanch for approx. 3 mins. Drain buk choy baby and udon noodles then add to chicken, toss well.
  6. 6. Squeeze the juice of 1 lime into the pan and toss through well. Serve miso chicken, noodles and greens. Garnish with black sesame seeds and remaining coriander leaves. Consume within 48 hrs.
