Pulled Beef Tacos With Mango Salsa + Habanero Carrot Sauce

Prep time: 20 minutes 
Cooking time: 1 ½ hours on pressure cooker or 3 hours in the oven 
Serves: 4 

Ingredients: 

  • 1 brown onion, sliced
  • 1 red capsicum, sliced  
  • 3 garlic cloves, finely sliced
  • 2 tbsp olive oil  
  • 1kg -1.2kg beef flank  
  • 1 tbsp Mexican spice  
  • 70g tomato paste
  • 200g chipotle sauce
  • 300g tomato passata
  • ½ bunch coriander, finely chopped 

Mango Salsa

  • 1 mango, diced  
  • ¼ red onion, diced
  • 1 tbsp finely chopped coriander 
  • 1 tbsp olive oil 
  • 1 lime, juiced 
  • Pinch black pepper

To Serve

Method 

  1. Place a large pan over high heat, add in half of the olive oil and add the capsicums, onions and garlic. Sauté for 3-5 mins until soften. Remove from pan and set aside.
  2. Sprinkle the beef flank with salt, pepper and the Mexican spice mix. 
  3. Using the same pan over high heat, drizzle with the remaining olive oil, sear the beef on high heat for approximately 3 minutes on each side until browned. 
  4. Add the tomato paste, chipotle sauce, tomato passata and 1 tbsp of the chopped coriander, mix well and add the capsicum and onion mix to the pan. 
  5. Place into the pressure cooker and set it to 1 hr, then let it rest for ½ hour. If cooking in the oven: preheat the oven to 160°C, add 1 ½ cup of stock or water to the sauce and cook it covered for 3 -4 hours until the beef is tender.
  6. Shred the beef using two forks and toss it all through the sauce. Check seasoning. If the sauce is too liquidly, simmer it for 10-15 minutes over low heat to reduce until it thickens.
  7. To make the Mango Salsa: Add mango, red onion, 1 tbsp of coriander, 1 tbsp of olive oil, lime juice and freshly cracked pepper into a bowl and mix until combined.
  8. In a separate heavy-base skillet over medium-high heat. Add a La Tortilleria Corn tortilla and cook for 10-15 minutes in the dry frying pan until blackened in spots and warm. Set aside wrapped in a tea towel while heating the rest. 
  9. Build each tortillas with avocado slices, Mango Salsa, Pulled Beef and drizzle over the Fancy Hanks Habanero + Carrot Hot Sauce.
  10. Enjoy.
