Will Stud Selected Brillat Savarin is ripened under a delicate, ivory coloured wrinkly rind formed by a Geotrichum Candidum. This yeast gives the cheese its signature flavour and aroma.
Occasionally, you may notice fluffy white patches or little 'bunny tails' on the surface. These are Penicillium Candidadum-a type of mould used on other cheeses made in the same French creamery. Because Penicillium Candidum is naturally present in the air in the maturation room and is more dominant than Geotrichum, it can sometimes grow in patches on the rind.
These patches are harmless and purely cosmetic-they don't affect the flavour, texture, or quality of the cheese.
Simply pat them down before serving.
