One Tray Gnocchi Bake

Prep time: 10 minutes 

Cooking time: 25 minutes 

Serves: 4 

Ingredients: 

  • 500g gnocchi 

  • 800g tomato basil pasta sauce 

  • ½ cup stock  

  • 1 tsp salt  

  • ½ tsp pepper 

  • 1 tsp brown sugar 

  • 2 cups kale leaves, picked  

  • 450g cherry mix tomatoes  

  • 1 Spanish onion, diced  

  • 1 tbsp capers 

  • 170g jar artichokes, quartered and marinated  

  • ½ cup kalamata olives, pitted 

  • 2 tbsp pesto 

  • 1 tbsp caramelised balsamic vinegar 

  • ½ cup basil leaves, picked 

  • 200g mozzarella cheese, teared by hand  

  • ½ cup Parmesan cheese  

Method 

  1. Preheat the oven to 180°C. 

  1. Open the gnocchi packet and separate from each other by rubbing them with your hands. 

  1. Add the tomato sauce and the stock into a baking dish and season with salt, pepper and brown sugar. Stir to combine.  

  1. Scatter the kale leaves and add the gnocchi. Press the gnocchi down to submerge them into the sauce. 

  1. Add the mix cherry tomatoes, Spanish onion, capers, artichokes and olives. 

  1. Add the pesto and drizzle with the caramelized balsamic vinegar. 

  1. Scatter the fresh basil leaves and top up with pieces of mozzarella and parmesan cheese. Mix thoroughly. 

  1. Place into the oven and cook for 25-25mins until bubbling and golden brown. 

  1. Serve hot with freshly grated parmesan and garnish with fresh basil leaves.
