Lychee and Lime Gimlets

This fresh lime cordial works just as well with sparkling water and fresh mint for a virgin cocktail and can also be used in daiquiris. A gimlet is a bracing drink, best served ice cold. Lychees help soften the impact, but can also be replaced with a slice of pineapple, or some cold green grapes.

Makes 6.

INGREDIENTS

Fresh lime cordial:

  • 1 1/2 cups/ 375 ml water
  • 1 cup/ 200g caster sugar
  • 1/2 cup fresh squeezed lime juice
  • Zest from 3 limes, peeled in strips

Gimlet:

  • 300 ml gin 
  • 120 ml lime cordial
  • 6 lychees, peeled and seeded

METHOD

  1. To make the fresh lime cordial bring the water to a boil in a saucepan. Add the lime zest, sugar and juice. Stir until the sugar is completely dissolved.
  2. Reduce heat, cover and simmer for about 15 minutes.
  3. Remove from the heat and allow to cool. Pluck out the lime zest. 
  4. Bottle in a container with a tight sealing lid and store in the fridge.
  5. To make the gimlets combine the gin and lime cordial in a jug with ice. Stir and then strain and pour into chilled martini glasses. Garnish with a peeled and seeded lychee.
