Grilled Prawns with Gremolata Butter

Prep time: 15 minutes
Cooking time: 5 minutes
Serves: 4-6
Ingredients:

500g –1kg prawns, whole, shell on

½ tsp salt

¼ tsp pepper

100g butter, at room temperature

2 birds eye chilli, finely chopped

1/3 cup chopped parsley
-
1 lemon, zest and juice
-
2 large garlic cloves, finely chopped

1 tbsp olive oil
Method:

Butterfly the prawns by slicing them from the head down to the tail and stopping just before cutting through the shell, season them with salt and pepper and set aside on a tray.

Place the butter, chilli, parsley and lemon zest into a mixing bowl and stir together using a fork until combined.

Place a cast iron skillet over high heat. Or heat a BBQ to high heat.

Drizzle the prawns with the olive oil and grill or fry pan the prawns for 2 minutes on each side until golden brown and cooked through.

Add the butter into a small frying pan (or add to the grill pan used). Allow butter to bubble, then add the lemon juice.

Toss the prawns with the butter and serve hot.
