Gingerbread People

Servings: 12 biscuits
Ingredients:
- 1.5 cups spelt flour OR 3/4 cup almond meal and 3/4 cup buckwheat or cassava flour (GF option)

1/3 cup coconut sugar

1/2 tsp vanilla powder

1/4 tsp baking powder

2 tsp ginger powder

1/2 tsp cinnamon

1/4 tsp ground nutmeg
- 1/4 tsp ground clove

1 pinch sea salt

1/4 cup melted butter
- 2 tbsp milk of choice
Method:

Preheat oven to 160°C fan-forced.

In a bowl, combine all of the dried ingredients.

In a separate bowl, combine all of the wet ingredients.

Add the wet ingredients to the dry and mix until a dough forms. If too sticky or wet, add more flour; if too crumbly, add more milk.

Roll into a ball and refrigerate, covered, for one hour.

After an hour, place the dough between two sheets of baking paper and roll until thin (about 1/4 cm). Cut into shapes using cookie cutters or a knife.

Place onto a prepared baking tray and bake for 10 minutes or until golden. They may still be soft—allow to cool and they will firm up as they cool.
