Father’s Day Burgers

Prep time: 20 minutes  
Cooking time: 15 minutes  
Serves: 4 

Ingredients: 

Patty: 

  • 1kg beef mince  

  • 1 tsp salt 

  • 2 tsp Dijon mustard 

  • 2 tsp Worcestershire sauce  

  • ¼ tsp pepper 

Mayo: 

  • 3/4 cup mayonnaise  

  • 1 tbsp tomato sauce 

  • 2 tsp Worcestershire sauce  

  • 2 tsp American mustard  

  • 2 tbsp gherkins, finely chopped  

  • 2 tsp Gherkin pickled liquid 

  • 1 tbsp Spanish onion, finely chopped 

  • 1 tsp sugar 

  • 1 tsp salt  

Burger: 

  • 4 burger buns, sliced in half 

  • 10g butter 

  • ½ Oak lettuce or any other lettuce of your preference, picked and washed 

  • 6 gherkins or cornichons, finely sliced  

  • 8 slices yellow cheddar cheese  

  • 1 brown onion, finely sliced  

  • 150-200g streaky bacon  

  • Chips to serve (optional) 

Method: 

  1. For the patties: place all the ingredients together into a mixing bowl. Gently massage, mixing together, until well combinedRoll the mixture into 100g balls and set aside on a tray. 

  1. For the May: Add all ingredients into a mixing bowl and whisk until combined. Set aside in the fridge until ready to serve 

  1. Place a large frying pan or a flat grill over high heat. Cook the bacon for 3 minutes on each side or until golden brown in both sides. Remove from the pan and roughly chop it into pieces. 

  1. In the same pan, reduce heat to meating, then add the onions with a dash of oil. Cook, stirring, until golden brown and soft. Remove from the pan and set aside. 

  1. On the same pan, drizzle some olive oil and place one mince ball. Using a burger smasher or a spatula to help you, firmly press down the patty until ½ cm thick, cook for 2 minutes on each side until browned. (Place a piece of baking paper in between the press and the patty for ease).  

  1. Place the cheese on top and scatter some of the onions. Repeat with the next patty and place it on top of the first one (2 patties per burger). 

  1. Heat up the burger buns by adding some butter to the pan and facing the buns with the inside down for 30 seconds until golden brown. 

  1. Build your burgers by spreading 1 tbsp of sauce in both sides of the buns, follow with lettuce on the bottom, burger patties, chopped bacon, sliced pickles and finish with the bun top 

  1. Serve with hot chips if desired. Enjoy.
