Custard Porridge with Spiced Pears

Ingredients:

Custard Porridge

Spiced Pear

  • 1-2 ripe pears
  • 1 cup water
  • ½ cup sugar
  • Rind of ½ lemon
  • 1 cinnamon stick
  • 1 tbsp vanilla extract

Method:

  1. To make the spiced pears, place the water, sugar, lemon rind and cinnamon stick in a small saucepan over medium heat. Stir until the sugar dissolves. Peel, halve and core the pear, then add it to the pan along with the vanilla. Let it simmer gently for 10–15 minutes, or until the pear is tender — the exact time will depend on the ripeness of the pear. Remove from the heat and set aside.
  2. For the custard porridge, combine the oats, Little Big Dairy full cream milk and a pinch of salt in a separate saucepan over medium heat. Bring to a simmer, then reduce the heat to low and cook for about 10 minutes, stirring occasionally, until the oats are creamy and thick. Add a splash more milk if you like it looser. Take the pan off the heat and quickly stir in the egg yolk until it’s fully incorporated — this is what gives the oats their luscious, custardy flavour.
  3. Spoon the porridge into a warm bowl, top with the spiced pear, sprinkle with brown sugar and finish with a drizzle of Little Big Dairy’s double cream.
