Chicken Pesto Penne

500g sliced chicken breast

500g penne pasta

190g pesto
-
100g parmesan cheese

120g spinach leaves
From the Pantry

1 tbsp salt
-
¼ tsp pepper

2 tsp olive oil
Method

Bring a large pot of salted water to the boil.

Heat a large frying pan over high heat and drizzle with olive oil.

Add the chicken, season with salt and pepper, and sear for 4–5 minutes on each side until golden and fully cooked. Turn off the heat and keep warm in the pan.

Cook the pasta according to packet instructions.

Drain the pasta, reserving 1 cup of the cooking water. Return the pasta to the pot.

Add the spinach, pesto, chicken, and reserved pasta water to the pot. Toss through until well combined.

Check seasoning and serve with parmesan cheese.
