1. Removethechickenfromthepackaging,patdryandcutinto medium-sizedcubes.On a separate chopping board,choptheendsoff thebroccoliniandcuttheredcapsicumintothinstrips, discarding the seeds.
2. In a large pan or casserole dish,add1 tbsp ofoliveoilandsearthechickenon a high heat for 5 minutes.Addthecapsicumstrips and cook for approx. 3 mins.
3. Addthecurrysauce, stir through andcookuntilit starts toboil, thenaddthecoconutmilk. Bring the curry to the boil and turn down to medium heat,addthebroccolini, cover and let cook.
4. Meanwhile, place thezucchini noodlesand therice noodlesinto alarge mixingbowlandfillit upwithboilingwater.Soak for5 minutes,stirring occasionally toseparate the noodles.Drainthe noodlesand set aside.Servethecurrywith thenoodles,zoodlesand garnish with some coriander and lemon juice if you wish.
