Cardamom Hot Chocolate

Infused with cardamom and fresh orange zest, this lush hot chocolate is balanced with light spice and rich dark chocolate. This grown-up take on a classic makes for a simple and impressive dessert for chocolate enthusiasts.
Ingredients:
- 1 tsp cardamom pods
- 1 orange
- 250ml full cream milk
- 50g dark chocolate
- 1 tbsp raw cacao powder
- Whipped cream, for serving

Lightly crush the cardamom pods in a mortar and pestle. Peel three large strips of rind from the orange using a vegetable peeler. Place the cardamom and orange rind in a small pot with the milk and bring to a gentle simmer.

Once the milk is hot and fragrant, strain out the pods and rind, then return the milk to the stove over low heat. Add the dark chocolate and cacao powder, whisking gently until melted and fully combined.
- Pour into a ceramic mug, top with whipped cream and finely grated orange zest on top.
