Beef Black Bean Stir Fry Noodles

Prep time: 5 minutes  

Cooking time: 25 minutes

Serves: 4  

Ingredients :

  • 1 green capsicum, cut into 1cm strips  

  • 1 bunch shallots, cut into batons 

  • 500-700g beef porterhouse/rump sliced into strips

  • 1 bunch broccolini, bottom ends trimmed off 

  • 210g black bean sauce  

  • 375g fresh egg noodles, (Double Morenos) 

From the Pantry

  • 2 tbsp cooking oil  

  • 1 tbsp sesame seeds 

Method:

  1. Bring a wok or a large frying pan to high heat. Drizzle 1 tbsp of the cooking oil and add the capsicums. Cook 3 minutes and add the shallots. Cook for 2 minutes and remove from the wok. 

  2. Drizzle the remaining cooking oil and once hot, add the beef. Cook for approximately 5 minutes until just brown, making sure to not overcrowd the pan, preferable in two baches.  

  3. Once all the beef has been seared, add the vegetables back to the pan. Add the black bean sauce and cook for 5 minutes. 

  4. Cook the broccolini in the boiling water for 3 minutes and add to the wok. 

  5. Cook the noodles in the boiling water for ½ a minute and drain well. Add the noodles to the wok and toss through.  

  6. Serve beef stir fry noodles with black bean sauce hot and garnish with toasted sesame seeds.
