We don't ask our farmers to send animals to the abattoir; we bring the state-of-the-art abattoir to our farmers. By processing livestock on their home farm, Provenir proudly puts quality and animal welfare over speed and convenience. We work with farmers of happy cattle, keeping them grass-fed on pastures, hay or silage. They enjoy clean water, shelter and shade and are free to live their natural behaviours. We don’t do hormones, antibiotics or intensive feedlots.
Farming livestock takes more than land and logistics. It takes time, energy and a strong understanding of the landscape to provide a quality environment for animals to thrive. The truth is – this care often gets lost in the last days of an animal's life. When they’re sent away for processing, farmers forgo the opportunity to see their animals, respectfully, all the way through life.
Sent on a truck – there’s no feed and no familiar faces or voices. This increases stress levels, produces adrenaline and creates a chemical chain reaction that consumes the animal’s energy reserves (glycogen). It also increases lactic acid levels which can impact taste and tenderness.
Provenir's mobile on-farm processing unit focuses on meat with morals. As Agriculture and food production change rapidly, what happens once animals leave the farm remains ambiguous and largely unchanged over generations. In the old narrative, people don't want to know about their meat's origin and lifespan. But in the new narrative, our customers insist on understanding the provenance of their produce.
Founded in 2017, Provenir was formed by farmer Chris Balazs, chef Christopher Howe, veterinarian Phil Larwill, barrister Merissa Martinez and marketing manager, Jayne Newgreen. We’re essentially a partnership of farmers who practise regenerative agriculture and hold animal welfare to the highest standards. We produce premium quality meat by providing a comfortable, calm quality of living, right up to end-of-life.
Previous to Provenir’s mobile solution, all Australian livestock had to be processed at static abattoirs. Live transport often involves vast distances in harsh conditions and industrial environments. This puts animals under stress and damages meat quality – all avoidable by taking the abattoir to the farm. We consciously support our farmers to grow their regenerative farming practices for tastier, tender meat with great flavour profiles. All which actively supports the land on which it was grown.
Using a digital provenance platform, Provenir connects consumers who care about how their food is grown and raised with the story of their produce. The QR code, printed on every pack, lets you authenticate your purchase. Access transparent farm practices, so you can support the systems you champion.

As custodians of the land, farmers protect our natural resources and regenerate ecosystems.
