
Pork and Beef Tacos
COOKING INSTRUCTIONS

1. Add 1 tbsp of olive oil to a pot and add in the pork and beef mince. Cook for 3-4 mins and stir occasionally to separate the mince.
2. Add the Mexican sauce and 250mL of water, then add the drained kidney beans, stir, bring to the boil and turn down to low and simmer for 10 minutes.
3. Meanwhile, finely chop the lettuce, dice the tomato, zucchini and cucumber into small cubes, and mix in a bowl. Season with salt and pepper and a drizzle over 1 tsp of olive oil, set aside.
4. Cook your tortillas; To grill them, place onto a sheet of foil and into the oven or alternatively, heat them up in the microwave for 45 seconds. Garnish with a squeeze of lemon juice, and serve with guacamole, salsa and coriander if you wish.
